I love this week’s Quick Family Recipe, especially now that I’m working from home… maybe you are, too and looking for quick recipes that are better than just another sandwich. This recipe will do that for you! I call it my Foldovers – kinda like a quesadilla, but you can stuff it with whatever meat and cheese you like. Also, kind of like a sandwich, but quick and easy to make and served nice and toasted. 

I do like to make mine with taco meat and cheese, but to make my life easier – I’ll make a big batch of taco meat on our taco night and then keep some in an airtight container in my fridge that I can use to make this recipe throughout the week. That way I can literally have lunch on the table in about 5 minutes, because I’m just panfrying my tortilla, but everything in it is already cooked! 

These are great to make ahead, too! I make a few extra and keep them in the fridge for my husband to take to lunch with him when he goes to work. He pops them in the microwave and they are perfect reheated, also! 

So let’s jump in the kitchen and make lunch together…

  • 1 Tortilla Shell
  • Olive Oil
  • Whatever Meat You Like (I Used 1-2 Spoonfuls of Taco Beef)
  • Your Favorite Cheese (1/4 Cup of Shredded Cheese)

How to Make:

  • Drizzle olive oil in a small pan over medium  to medium/low heat. 

  • Take tortilla and slide one side through the olive oil. Leave that side down.

  • Add your meat and cheese to half of your tortilla and then fold the empty half over the top.

  • Pan fry in olive oil till bottom is brown, not burnt – this is why it’s important not to turn the temperature up. It will burn easily if you do. Flip over and let other half pan fry till brown.

  • At this point, your cheese should be melted, too.
  • Serve hot and Enjoy!
